In autumn, the Northern Hemisphere experiences very distinctive climatic conditions. During the so-called Indian summer, which coincides with the Nocte grape harvest, significant temperature variations between day and night favour the development of aromatic precursors \u2014 compounds that will later contribute to the wine\u2019s aromas.<\/p>\n

For several years, we have been analysing the aromatic differences in grapes harvested at night, observing a predominance of fruity notes. We continue our research to establish whether night harvesting enhances the wine\u2019s aromatic profile.<\/p>\n
